Ingredients
- 2 tsp oil
- 300g smoked Kessler loin, diced
- 1 large onion, finely chopped
- 1–2 cloves garlic, crushed
- 3 to 4 medium-sized potatoes, diced
- 1 large carrot, diced
- 6 courgettes, thinly sliced
- 1 punnet button mushrooms
- ½ cup cream
- 4 tbsp chopped parsley
- salt & freshly ground black pepper
- pinch dried thyme
- dash of soy sauce
- Prepare your COBB and, when it’s ready, place the wok pan directly over the coals and heat for five minutes.
- Add the oil and heat for another two minutes.
- Stir-fry the diced Kessler, onion, garlic, potato, carrots and courgettes for five minutes. Add mushrooms and continue stir-frying for five minutes.
- Add cream and cook for 4–5 minutes.
- Add parsely and seasonings last and then toss to combine well.
- Serve immediately.
