Butternut & Onion Packets

Serves 4

  • 1 butternut, unpeeled and cut into thick slices
  • 1 large onion, thickly sliced
  • 1 tbsp butter (or Italian olive oil)
  • salt & freshly ground black pepper
  • 2 tsp BBQ rub
  1. Prepare your COBB and, when it’s ready, fit the grill.
  2. Remove pips from butternut slices.
  3. Cut four large pieces of foil and grease the shiny side lightly.
  4. Arrange butternut on the pieces of foil, top with the onion slices, then a knob of butter, seasonings and BBQ rub
  5. Wrap carefully and place on the grill.
  6. Cover and cook for about 45 minutes until tender, turning once.
